Coconut, Lime & Kiwifruit Muffins

You know when you look at a recipe and like the sound of it? Well, that’s exactly what I thought when I decided to make these delicious morsels. This recipe is adapted from the March issue of Australian Good Taste magazine. Ready to eat in 30 minutes!

Makes 8 cupcakes
1/2 cup desiccated coconut
2 cups of self-raising flour
1/2 cup caster sugar
1 tablespoon finely grated lime rind
3 kiwifruit, peeled and thinly sliced
90g melted butter
1 cup buttermilk
1 egg
1/2 cup shredded coconut
icing sugar for dusting

Preheat oven to 200c. Grease eight (150ml capacity) muffin pans. Combine flour, sugar, desiccated coconut and lime rind in a bowl. Make a well in the center. Whisk together butter, buttermilk and egg in a bowl. Add to flour mixture and stir until combined. Divide mixture between the prepared muffin pan. Top with kiwifruit and sprinkle with shredded coconut. Bake 20-25 minutes or until a skewer comes out clean. Turn out on a wire rack to cool. Dust with icing sugar.

The Culinary Chase’s Note: Make sure to push the kiwifruit into the batter. Adding some chopped kiwifruit to the batter will enhance the kiwifruit topping. These beauties are lovely eaten warm. Enjoy!
