Coconut, Lime & Kiwifruit Muffins
You know when you look at a recipe and like the sound of it? Well, that’s exactly what I thought when I decided to make these delicious morsels. This recipe is adapted from the March issue of Australian Good Taste magazine. Ready to eat in 30 minutes!
Makes 8 cupcakes
1/2 cup desiccated coconut
2 cups of self-raising flour
1/2 cup caster sugar
1 tablespoon finely grated lime rind
3 kiwifruit, peeled and thinly sliced
90g melted butter
1 cup buttermilk
1 egg
1/2 cup shredded coconut
icing sugar for dusting
Preheat oven to 200c. Grease eight (150ml capacity) muffin pans. Combine flour, sugar, desiccated coconut and lime rind in a bowl. Make a well in the center. Whisk together butter, buttermilk and egg in a bowl. Add to flour mixture and stir until combined. Divide mixture between the prepared muffin pan. Top with kiwifruit and sprinkle with shredded coconut. Bake 20-25 minutes or until a skewer comes out clean. Turn out on a wire rack to cool. Dust with icing sugar.
The Culinary Chase’s Note: Make sure to push the kiwifruit into the batter. Adding some chopped kiwifruit to the batter will enhance the kiwifruit topping. These beauties are lovely eaten warm. Enjoy!

Great and delicious ingredients combined – your cupcakes look beautiful!
All of my favorite things in one muffin!
Yum! You need to add this to the Muffin Monday blog event Experiments is hosting (http://www.sqpixels.net/)
The muffins look terrific!
I love muffins. Isn’t it strange how home made muffins are much smaller then those in shops yet taste so much better?
Never had kiwi cupcake before. Sound great!
