Grilled Zucchini Feta Roll-Ups

Ingredients
- 2 medium zucchini
- 1 block of feta cheese
- 1 clove garlic, minced
- 1 teaspoon Italian herb seasoning (or your favourite dried herbs)
- 2 tablespoons olive oil
- 2 teaspoons fresh lemon zest
- Wooden skewers (soaked in water for 15 minutes if using a BBQ)
Method
- Prep the Zucchini: Using a vegetable peeler or mandoline, slice the zucchini lengthwise into long, thin ribbons and set aside.

- Cube & Marinate: Cut the block of feta cheese into bite-sized cubes (but don’t overhang the zucchini ribbon). In a shallow dish, whisk together the minced garlic, olive oil, lemon zest, and Italian seasoning. Gently toss the feta cubes in the mixture until they are well-coated.
- Roll & Skewer: Lay a zucchini ribbon flat on a cutting board. Place a marinated feta cube at one end and tightly roll the zucchini around it. Secure the roll-up by threading it onto a skewer. Repeat the process until all the zucchini ribbons are used.

- Grill to Perfection: Preheat the barbecue or indoor grill pan to medium-high heat. Grill the zucchini skewers for a few minutes on each side, or until golden brown grill marks appear.
- Serve: Remove from the heat. Serve them right on the skewers for easy finger food, or slide them off onto a platter for your guests to devour.
