Easy Fresh Fig Appetizer with Whipped Feta and Hot Honey
A luscious, cloud-like whipped feta pairs beautifully with the jammy richness of ripe figs, finished with crunchy pistachios and a drizzle of hot honey. You Will Need
- 8 oz. feta cheese
- ½ cup plain Greek yoghurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil (plus a splash more, if needed)
- 6 to 8 fresh figs, skins removed (use a sharp paring knife)
- Sea salt & freshly ground black pepper, to taste
- ¼ cup pistachios, roughly chopped
- Hot honey, to drizzle
Method
First, start with the whipped feta: add the feta, Greek yoghurt, olive oil, and lemon juice to a food processor and blitz until silky smooth. Then taste and adjust; a little more olive oil loosens it beautifully if needed. Season with salt and pepper. 
Meanwhile In a small bowl, roughly mash the figs with a fork, keeping a little texture for character.
Finally, to plate, spread the whipped feta across a shallow serving dish in a generous layer. Spoon the mashed figs over top, scatter with pistachios, and finish with a drizzle of hot honey. Serve alongside crackers, toasted crostini, or endive leaves for scooping.
