Pepper, Red Onion and Goat’s Cheese Frittata
This week has been a busy one for me so I’ve been looking at recipes that are super quick yet delicious. This dish is adapted from BBC Olive magazine. Bell peppers are excellent sources of vitamin C and vitamin A and onions are very rich in chromium and vitamin C. Like garlic, the regular consumption of onions has been shown to lower high cholesterol levels and high blood pressure. For more onion health benefits, click here.
Serves 2
6 eggs
olive oil
1 red onion, thinly sliced
1 red pepper, chopped into 2cm pieces
100g goat’s cheese
1/2 teaspoon paprika
small handful of fresh herbs such as parsley and chives, roughly chopped
Beat the eggs and season well. Heat 1 tablespoon oil in a small non stick frying pan and cook the onion and red peppers for 3-4 minutes to soften. Add the eggs and cook for 5-6 minutes until almost set. Dot the goat’s cheese over, then sprinkle the paprika and herbs over the top. Slide under a hot grill for 2-3 minutes until golden. Cut into wedges and serve with salad.
The Culinary Chase’s Note: I used a 1/4 teaspoon of Spanish smoked paprika in lieu of regular paprika. Try adding other vegetables such as zucchini or mushrooms. Frittata is also great the next morning for breakfast.

This is the third or fourth frittata post I’ve read this morning, and no two are the same — which proves that frittatas are the perfect dish for using leftovers, combining several ingredients, and satisfying hunger. Whenever I have unexpected visitors, I always make a frittata, even if all I add to it is fresh herbs and an onion. Yum.
I love frittatas. Never tried it with goat cheese. Must remember to try it.

I love frittatas – and I know they’re good, cold, for breakfast… Not from personal experience, though, I never have any leftover.
