you will need
prosciutto
arugula
fresh cow’s milk mozzarella (fior de latte)
oven-dried tomatoes (or purchased sun-dried tomatoes)
fresh basil
aged balsamic vinegar
method
Place a minimum of 4 slices of prosciutto overlapping slightly. Add a thin layer of arugula near the end of the prosciutto leaving an edge. Add slices of mozzarella, then top with tomatoes.
Drizzle with aged balsamic vinegar and finish off with basil leaves. Gently roll up the bottom part of the prosciutto so that it reaches the top of the salad ingredients. Tightly roll until you run out of prosciutto.
Using a sharp knife, slice into thick chunks and serve.

The more slices of prosciutto overlapped, the longer the roll. If not serving immediately, wrap the roll(s) in cling film and place them in the fridge. Remove from fridge, slice and serve. Enjoy!
