Warm Avocado and Chorizo Salad
This is an easy main meal to make especially now that summer is here! The avocado has been around for thousands of years and is rich in potassium (helps regulate blood pressure) and vitamin A (helps your eyes). Avocado paste can be applied to the skin to help with rashes and to smooth rough skin.
Serves 4
4 tablespoons olive oil
1 small ciabatta (torn into small bite size pieces)
160g sliced chorizo
250g baby plum or cherry tomatoes halved
2 tablespoons balsamic vinegar
pinch of sugar
1 large, ripe avocado, halved, stoned and sliced
150g baby leaf and herb salad mix
Heat 2 tablespoons of the olive oil in a non stick frying pan. Fry the ciabatta for 8-10 minutes, tossing occasionally until starting to crisp and lightly brown. Remove from pan and toss into a bowl. Add chorizo to the same pan and dry fry for 2 minutes until it gives out a red oil. Toss in the tomatoes and cook over a high heat for 1-2 minutes until they start to soften. Drizzle over the vinegar and add the sugar. Season well.
Gently toss the avocado, salad and remaining olive oil with the croutons. Spoon over the chorizo and tomatoes and drizzle with any pan juices. Serve immediately.
The Culinary Chase: This salad is bursting with flavors! Make sure the avocado isn’t too ripe as it will get too mushy.

I can hardly think of a prettier salad… I adore avocados – their easy and cheap availability is one of the things I miss most about South Africa. This is definitely going on my “to make” list!
