Blueberry Muffins

The nursery rhyme, The Muffin Man, was first recorded in 1820 in Britain. Victorian households had many of their fresh foods delivered and muffins would be delivered door-to-door by a muffin man. The muffin in question was the bread product known in much of the English-speaking world today as English muffins, not the much sweeter cupcake-shaped American variety.

Makes 12 muffins 
adapted from Canadian Living

2 cups all-purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1 1/4 cup granulated sugar
2 eggs
3/4 cup milk
1-1/2 cups blueberries

Preheat oven to 190c (375f). In bowl, combine flour, baking powder and salt. In separate bowl, cream butter with sugar; beat in eggs one at a time. Gradually stir in milk (mixture may appear curdled). Make a well in centre of dry ingredients; pour in liquid and stir just until moistened. Gently fold in blueberries. Spoon into large paper-lined or well-greased muffin cups, filling 2/3 full. Sprinkle the tops with a bit of sugar.  Bake in the oven for 25 to 30 minutes or until tops are firm to the touch.

The Culinary Chase’s Note: Wild blueberries are my favorite for this recipe as they are smaller and have more flavor. Lightly dust the blueberries with flour to keep them from sticking in clumps when added to the batter.

    I’ve never heard of a muffin man who went door to door, but that’s pretty neat. 🙂

    Blueberry muffins made with cultivated (un-wild) blueberries are just not authentic.
