Chicken and Tomato Flour Tortilla


Can’t think of what to make for tonight’s supper? This recipe is from Australian Good Taste magazine is easy and quick. It’s also a great idea for an after school snack.

Serves 4
6 flour tortillas
finely chopped tomatoes
shredded cooked chicken
finely chopped red onion
fresh coriander leaves
grated cheddar cheese

Preheat oven to 180c. Place a flour tortilla on a baking tray. Sprinkle with shredded chicken, tomato, red onion, coriander leaves and cheese. Top with another tortilla. Repeat the layers four more times finishing with a tortilla. Bake for 15 minutes or until toasted and the cheese has melted. Cut into wedges.

The Culinary Chase’s Note
: I used minced chicken and cooked with a sprinkling of smoked paprika. Cool to room temperature. Make sure the ingredients are even or close to even otherwise the edges will droop. Adding chopped avocado is another welcomed ingredient. Serve with a side of salsa or guacamole.
