Hummus


With its Middle Eastern origins, hummus is a dip best accompanied by pita bread and fresh assortment of vegetables. The garbanzo bean also known as chickpea is an edible legume. It is said that hummus origins trace back to the Sultan Saladin, a veteran of the Crusades, who enjoyed cooking as a pastime. In addition to lowering cholesterol, garbanzos’ high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. 2-3 tablespoons of Tahini
1 can chickpeas, drained but reserve the liquid
3 cloves of garlic, chopped
3 tablespoons extra virgin olive oil
2-3 tablespoons fresh lemon juice
1/4 teaspoon salt (to taste)
1 tablespoon of the chickpea liquid

Place all ingredients in a blender or food processor. Puree until smooth. At this point you may need to adjust the flavors by adding more of the chickpea liquid, lemon juice, olive oil, salt or tahini.

The Culinary Chase’s Note: Top the hummus with a drizzle of extra virgin olive oil followed by a sprinkle of smoked sweet paprika. To add a bit of spice, mix the hummus with some Jerk seasoning. Yum!

    My wife made pesto, then hummus in the same food processor giving her pesto a hummus flavor!

    Hummus is so delicious – and easy to make! I enjoy roasted red pepper hummus myself. Once you’ve made it fresh – the store bought just never cuts it. Thanks for this recipe!

    I love hummus but I have not attempted to make it yet. I think I had a bad experience when one of my girlfriends made it in high school. It was all grainy.
