easy fresh figs appetizerA luscious, cloud-like whipped feta pairs beautifully with the jammy richness of ripe figs, finished with crunchy pistachios and a drizzle of hot honey. Sweet, savoury, creamy, and just a little spicy.  This is the kind of dish that disappears the moment it hits the table.

Look for figs that are soft to the touch and smell sweet. A ripe fig should give a little when you press it gently, almost like a ripe peach. If they feel firm, leave them on the counter for a day or two. Peeling the figs is an extra step, but it is worth it. Without the skins, the figs mash into a soft, jammy topping that melts into the whipped feta. A sharp paring knife makes it quick work.

The whipped feta can be made a day ahead and kept covered in the fridge. Give it a quick stir before spreading, and add a splash of olive oil if it has firmed up. Mash the figs and assemble just before serving so everything looks fresh. This fig appetizer is made for sharing. Set it in the middle of the table with crackers, toasted crostini or crisp endive leaves and let everyone help themselves. It is lovely with a glass of chilled white wine or something sparkling.

Easy Fresh Fig Appetizer with Whipped Feta and Hot Honey

Silky whipped feta topped with mashed fresh figs, crunchy pistachios and a drizzle of hot honey. Sweet, savoury and a little spicy, it comes together in minutes and disappears just as fast.
Servings: 4 people
Course: Appetizer
Cuisine: Mediterranean

Ingredients

  • 8 oz feta cheese
  • 1/2 cup plain Greek yoghurt
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil plus a splash more, if needed
  • 6-8 fresh figs skins removed (use a sharp paring knife)
  • sea salt & freshly ground black pepper to taste
  • 1/4 cup pistachios roughly chopped
  • hot honey to drizzle

Method

  1. Start with the whipped feta: add the feta, Greek yoghurt, olive oil, and lemon juice to a food processor and blitz until silky smooth. Then taste and adjust; a little more olive oil loosens it beautifully if needed. Season with salt and pepper.
  2. In a small bowl, roughly mash the figs with a fork, keeping a little texture for character.
  3. To plate, spread the whipped feta across a shallow serving dish in a generous layer. Spoon the mashed figs over top, scatter with pistachios, and finish with a drizzle of hot honey. Serve alongside crackers, toasted crostini, or endive leaves for scooping.

The Culinary Chase’s Note

Want a little extra kick? A couple of dashes of your favourite hot sauce stirred into the whipped feta will take this from lovely to absolutely addictive. Enjoy!
