you will need

1 lb minced beef, lamb or chicken
1 large onion, grated (squeeze excess liquid from onion)
2 cloves of garlic, minced, then spread into a paste
1/2 cup chopped parsley or coriander
2 tablespoons chopped mint
1 tablespoon ground cumin
1 teaspoon smoked paprika
1 teaspoon ground black pepper
2 teaspoons sea salt
1 tablespoon sumac
1 tablespoon cinnamon
1 teaspoon ground cardamom

method

Combine all ingredients in a bowl. Allow the mixture marinate for at least one hour. Preheat oven to 375f. Spread the meat mixture over a tin foil-lined baking tray. sheet pan koftaUse a knife or spatula to separate into portions.Reshape if needed.  Cook for 20 minutes. If you want a crispy top, turn on the broiler and cook for another 2 minutes or until the desired look is achieved.  Make a quick yogurt sauce (yogurt, minced garlic, lemon juice, olive oil, s&p).  Use the sauce as a dip if using the kofta as finger food.
