boursin holiday cheese log

Boursin Cheese LogsCheese logs are a nostalgic holiday classic.  They were wildly popular in the ’50s and ’60s and still beloved today. My mom used to make hers with mixed cheeses, a splash of Worcestershire, shaped into a log and rolled in nuts and herbs. They always remind me of festive Christmas gatherings. The beauty is you can use any cheese you like. Also, goat cheese works wonderfully, and Boursin (I used garlic and fine herbs) is perfect since it’s already soft and flavoured.

New to entertaining? Skip the formal dinner and try a casual cocktail party instead. Set up small food stations to keep guests mingling, and above all, don’t stress about fancy serveware.  Use what you have: a cutting board, a cookie tin lid, or even a mirror. Simple, stylish, and stress-free.

you will need

150g Boursin cheese
1/4 cup chopped pistachios (or favourite nut)
1/4 cup chopped dried cranberries (or other dried fruits)

method

Combine pistachios and cranberries on a plate. Remove the foil around the cheese and place it in the middle of a piece of plastic wrap. Wrap up the cheese and use your hands to shape it into a log. It should be roughly four inches long. Remove plastic wrap and place the cheese log onto the nut mixture. Gently roll until all of the log is covered, including the ends. Enjoy now or place back into the refrigerator until ready to serve.

the culinary chase’s note:

Add a bit of greenery to the nut mixture by tossing in finely chopped parsley. Enjoy!
