peach tomato saladSummer is a season of abundance when the markets overflow with produce and flavour comes effortlessly. Juicy tomatoes, sun-ripened peaches, and lingering dinners on the patio make these months some of my favourites. It’s a time to celebrate simplicity, savour the season, and connect over good food.  In our family, salads are a staple, and this peach tomato salad is summer on a plate and a perfect celebration of everything the land has to offer.

you will need

1 ripe peach, sliced or roughly chopped
cocktail tomatoes, sliced into quarters
small cucumber, roughly chopped
1 green onion, sliced
sumac, sprinkled over salad
fresh dill
juice of half a lemon and zest
extra virgin olive oil

method

Add peaches, tomatoes, cucumber and green onion in a bowl. Squeeze lemon juice over the salad ingredients, followed by a splash of olive oil. Season with sea salt and freshly ground pepper.  Sprinkle sumac over and top with fresh dill. Serve with toasted or grilled bread slices.peach tomato salad

Substitute fresh dill with mint or torn basil leaves. Enjoy!
