cottage cheese pizza snacksThese protein-packed mini pizzas make the perfect after-school snack or quick bite when trying to tame those hunger pangs. While using cottage cheese as a pizza base might sound unconventional, it’s not meant to mimic traditional pizza. Instead, these pizza snacks are a fun, healthy twist that comes together in minutes (no dough-making required!). Best part?  Let the kids pick their toppings. It’s a fun way to get them involved and entertained.

Over the last couple of years, cottage cheese has been having a quiet comeback. Last year, I shared a simple cottage cheese flatbread and turned it into a breakfast wrap that kept everyone full and happy!

you will need

1 cup cottage cheese
2 eggs
1 tablespoon of your favourite pizza seasoning (I used Italian)
1 teaspoon baking powder
1/2 cup flour
marinara sauce or pesto
shredded mozzarella
pizza topping such as pepperoni, salami, mushrooms, ham

method

Preheat oven to 400°f. In a bowl, add cottage cheese, eggs, and seasoning. Stir until well combined. Then add baking powder, flour and 1/2 cup of shredded mozzarella. Stir once more. Grab a parchment-lined baking tray and use an ice cream scoop to form the mini pizzas on the tray. Lightly press down each pizza mound using the back of the ice cream scoop. Add tomato sauce or pesto, mozzarella cheese and toppings.

I used pesto for my base and added chopped mortadella.

These are light and taste great hot or cold.  Make the rounds smaller, creating a two-bite pizza for the little kiddos.  Enjoy!
