you will need

wonton wrappers
brie
oil for frying
dipping sauce (I used sweet chili sauce)

method

Preheat cooking oil in a pot or deep fryer. The oil is ready when it registers 350f. Cut brie into small chunks. If using a round chunk of brie cheese, cut into wedges and cut those in half.

To assemble: Fill a small bowl with water and use your finger to wet the edges of a wonton wrapper—this will help seal it. Place a piece of brie in the center of the wrapper. Fold two opposite corners toward the center and pinch lightly to seal, then bring the remaining two corners up and pinch all edges together to form a parcel. Fry 4 to 6 wontons at a time in hot oil until golden brown. Use a stainless steel spider or wire scoop to remove them, and place them on a wire rack lined with paper towels to drain. Repeat until all wontons are perfectly crisp and golden.

Serve with your favourite dipping sauce.
