shortbread jam slices
Becoming a grandparent truly is one of life’s sweetest joys! Mr S and I are incredibly blessed to be grandparents to two beautiful boys—our eldest, Will, who’s three, and our youngest, Lachie, is seven months. Sundays at our house are extra special because Will knows exactly where Nan’s cookie jar is! Without fail, he makes his way to the jar and waits for Poppy (Mr. S) to lift him up. But let’s be honest, it’s never just one cookie—he always manages a handful (smart kid, right?).
As I sliced these buttery shortbread bars, I couldn’t help but wonder if Will would love them. Who am I kidding? Of course, he would! What kid doesn’t adore sweet treats? If you’re as big of a shortbread fan as I am, then you’ll love these delicious slices—perfect for sharing with your favourite little cookie monsters! 🍪❤️
ingredients
1/2 cup butter, room temperature
1/4 cup white sugar
pinch salt
1/4 teaspoon vanilla
1 cup flour
jam (your favourite such as peach, strawberry or raspberry)
method
Preheat oven to 325f. Grab a baking sheet and line it with parchment paper. In a bowl, use a wooden spoon and beat together butter, sugar and salt. Stir in vanilla. Add flour until combined. Divide dough in half. On a lightly floured surface, roll each half into an 8-inch log. Arrange, two inches apart, on the prepared baking sheet. Press the handle of the wooden spoon lengthwise along center of each log to create a deep groove; refrigerate for 15 minutes. Remove from fridge and fill the grooves with jam. Bake until edges are golden brown, about 25 minutes. While still warm, slice into 1/2-inch bars.
