bread dipping oil (so good!)

bread dipping oilIf you have been saving your best olive oil for a special dish, this recipe is for you!  This dipping oil is an easy, adaptable, and delicious recipe that comes together in 10 minutes.  Use fresh chunks of sourdough, sliced baguette or ciabatta and dip in. Dipping bread in olive oil symbolizes hospitality and the pleasure of sharing a dish. Because this recipe is very forgiving, the quantities below act as a guide.  This will easily serve 4 if other snacks accompany it. Use any leftover sauce to flavour pasta, as a salad dressing or in a soup. 🙂

ingredients

1 cup extra-virgin olive oil
1 garlic clove made into a paste
3/4 cup Parmesan cheese, finely grated
1/4 cup fresh parsley, chopped
1/4 cup chopped basil leaves
1/4 cup chopped olives (I used kalamata)
2 tablespoons chopped sun-dried tomatoes
splash of white balsamic vinegar

method

In a serving dish combine all ingredients. Do a taste test to decide what ingredient you want more of.  Once you’re satisfied, cover and refrigerate until ready to serve.  Bring the dish out of the fridge 30 minutes before serving to allow it to come to room temperature.

the culinary chase’s note:

Add a teaspoon of chilli pepper flakes or 1/2 teaspoon of sumac to spice it up. Enjoy!
