Grilled Zucchini with Tomato Slices and Feta

We use our barbecue on a regular basis and one of the things I like to grill are vegetables.  It’s easy to do, there’s little clean up afterwards and a bit of olive oil and seasoning is all you need to dress up any veggie.  I love how grilled zucchini allows the flavor of the vegetable to shine through.  When choosing feta cheese, try to get the Greek kind – it’s authentic and tastes better.

Serves 2 (as a side)

1 large zucchini, cut into quarters (lengthways)
1 large ripe tomato, thickly sliced
1 clove of garlic, minced
olive oil
sea salt and pepper
zest of a lemon
fresh mint, chopped
feta cheese

Preheat barbecue to medium-high.  Drizzle some olive oil over the zucchini and toss to coat.  Lightly season with salt and pepper.  Take a piece of tin foil (big enough to hold the tomatoes) and lightly cover with olive oil.  Place tomato slices on the tin foil, top with minced garlic and season with salt and pepper.  Place zucchini on preheated grill along with the tomato slices.  Cook 3 to 4 minutes per side for the zucchini.  Flip the tomatoes over after 4 minutes and cook for another 3 to 4 minutes (until slightly soft).  Remove vegetables from grill.  Place zucchini on a platter and top with tomato slices.  Crumble feta cheese over the top, add lemon zest and garnish with fresh mint.  Drizzle with a bit more olive oil.  Serve immediately or allow the flavors to develop and serve at room temperature.

    Wonderful idea of something old-fashioned. The blend of tomato and tangy flavor of Feta could make something so Mediterranean. Very delicious idea.
