Spinach and Ham Frittata
Being able to prepare a meal with the least amount of fuss is key for me especially when I’m in a hurry. Frittatas (Italian omelette) have to be one of the easiest dish to make. A meal that incorporates meat, cheeses and vegetables all in one dish. What’s the difference between an omelette and a frittata? I thought they were one in the same but omelettes traditionally have the egg mixture cooked and folded around a filling, while a frittata just mixes it all up, cooked in a mishmash combination all at once. Frittatas are often served at room temperature, making them perfect for brunches or larger groups.

6 eggs
1/2 cup pure cream
1/3 cup grated Parmesan cheese
2 garlic cloves, crushed
1 bunch English spinach, trimmed and shredded
100g shaved ham, chopped
250g cherry tomatoes, halved
Preheat oven 190c (170c fan forced). Grease a 6cm deep, 19cm square cake pan. Line base and sides with baking paper, allowing 1 2cm overhang on 2 sides. Arrange half the spinach in prepared pan. Top with half the ham and repeat with remaining spinach and ham.
To make the basic frittata mix, combine eggs, cream, cheese and garlic and pour over spinach mixture. Top with tomato halves, cut side up. Bake 35-400 minutes or until golden and set.

Yummy recipe!!! Just a suggestion, if you want to make it a bit more high-end for guests, use instead jamon iberico de bellota – aka pata negra or black hoof-. Iberico has a strong and delicious flavor,
