Parmesan Chicken
Dinner in 40 minutes? No problem! While the chicken is cooking you can get all the other vegetables ready and cooked. I usually serve this with pumpkin risotto but I was too lazy and opted for steamed basmati.
Serves 6
6 boneless and skinless chicken breasts, flatted slightly
Combine 1 cup bread crumbs, 1 1/2 cups of grated Parmesan, 3 tablespoons chopped parsley, salt and pepper. In another dish combine 1 teaspoon Worcestershire sauce, 1 teaspoon finely chopped garlic and 1/2 cup melted butter.
Dip chicken breasts into butter mixture then coat well with crumb mixture. Place chicken breasts in a single layer on a baking sheet. Bake at 180c (350f) for 35-40 minutes depending on thickness of chicken breasts. If the chicken appears to be drying out, drizzle with a bit more melted butter.
The Culinary Chase’s Note: I didn’t add the chopped parsley as I forgot to buy it and it still tasted good! As an option, garnish with sliced black olives, sauteed mushrooms and serve with fettuccine Alfredo on the side.
