spinach & cheese crispsThere’s an undeniable joy when a recipe works its magic—simple ingredients transforming into something elegant and delicious. These crisps are whisper-light, delicately crisp, and come together with minimal effort. My in-house taste tester (aka Mr. S) gave them an enthusiastic nod of approval. 🙂

Once they’ve cooled slightly, gently lift them from the baking tray and drape them over a rolling pin or bottle to create a beautiful curve. I first used this technique years ago with parmesan tuiles—purely for visual appeal—and it adds a refined touch that elevates even the simplest of snacks.

you will need

1 cup chopped fresh spinach
1/2 cup Parmesan cheese, finely grated
1/2 cup grated mozzarella cheese
1/4 cup feta cheese, crumbled
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon olive oil

method

Preheat oven to 375°F. Mix the ingredients in a bowl. Using a tablespoon, scoop out the mixture onto a parchment-lined baking tray. Gently flatten down the tops and loosely shape into a circle. Bake 8 to 10 minutes or until the edges are golden brown. Remove from oven and allow to cool for 5 minutes to firm up. Lightly drizzle with lemon juice.  The lemon juice complements the cheese and oregano by adding brightness, balance, and contrast:
