Beet Soup

Ingredients
  • ½ lb. cooked beets, chopped
  • olive oil
  • 1 small onion, chopped
  • 1 teaspoon curry powder
  • 1 Granny Smith apple, cored and chopped
  • 2 cups vegetable stock
  • plain yogurt, for topping
  • fresh parsley, chopped for topping (optional)
Instructions
  1. In a large saucepan, combine onion, 1 tablespoon of olive oil, and curry powder. Toss to coat and cook (covered) over low heat until soft.
  2. Add beets, apple, and stock. Bring to a soft boil, reduce heat and simmer, covered, 15 to 20 minutes or when apple is soft.
  3. Remove from heat and use a hand blender to process soup until smooth.
  4. Ladle into soup bowls, top with a tablespoon of yogurt.
Notes
Add more stock or water if soup is too thick. Enjoy!
