Beet Soup

- ½ lb. cooked beets, chopped
- olive oil
- 1 small onion, chopped
- 1 teaspoon curry powder
- 1 Granny Smith apple, cored and chopped
- 2 cups vegetable stock
- plain yogurt, for topping
- fresh parsley, chopped for topping (optional)
- In a large saucepan, combine onion, 1 tablespoon of olive oil, and curry powder. Toss to coat and cook (covered) over low heat until soft.
- Add beets, apple, and stock. Bring to a soft boil, reduce heat and simmer, covered, 15 to 20 minutes or when apple is soft.
- Remove from heat and use a hand blender to process soup until smooth.
- Ladle into soup bowls, top with a tablespoon of yogurt.
Add more stock or water if soup is too thick. Enjoy!
