puff pastry tacos
At the start of 2024, I began following Dominic Franks on Instagram. His upside-down puff pastry cooking for sweet and savoury dishes got my attention. Dominic’s upside-down tuna melt inspired me to make puff pastry tacos. And, let me tell you, these were so darn delicious! For other taco recipes you may like, view them here.
you will need
puff pastry sheets cut into 4 equal pieces
ground beef
shredded mozzarella
favourite taco toppings (chopped tomatoes, lettuce, avocado, sour cream, lime juice etc.)
taco seasonings (store-bought OR homemade)
method
Preheat oven to 400f (200c). Allow frozen pastry to thaw in the refrigerator. Meanwhile, grab a frying pan and cook ground beef. Add taco seasonings and stir. You can leave the meat seasoned as is, or add a tablespoon of tomato paste and one to two tablespoons of water to thin out the paste. Give the beef a good stir then remove pan from heat. Allow beef to cool slightly.
Grab a baking tray lined with parchment paper. Add shredded mozzarella to the tray in four places. Keep the shape a bit smaller than the puff pastry pieces. Add cooked beef on top of each cheese bed. Don’t worry if some falls off. Place a piece of cut puff pastry over the meat mixture. Pinch edges down with a fork and brush with an egg wash. Repeat process.
Bake in the oven for 15 to 20 minutes or until golden. Remove from the oven. Using a spatula, flip the tacos over. Dress with chopped lettuce, tomatoes, sour cream etc. Serve immediately.

After trying these, going back to a typical taco might seem ho-hum. Enjoy!
