fruit and nut crackers
This copycat version of gourmet fruit and nut crackers is easy to make and budget-friendly. And, they make a perfect hostess gift (yes, please!). Put your spin on these crackers and mix in your favourite nuts and dried fruits. Serve these crackers with cheese or cherished dip. They’re delicious on their own. you will need
3/4 cup dried fruit, roughly chopped (apricots, figs, dates, raisins, cherries, cranberries)
3/4 cup nuts or seeds (pistachio, pecans, pumpkin seeds, almonds)
1 tablespoon orange OR lemon zest
1 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground black pepper
2 tablespoons brown sugar
1 cup milk
method
Preheat oven to 350f (180c). Grab a loaf pan and line it with parchment paper. In a bowl, combine dry ingredients then add milk and stir. Pour batter into pan. Bake for 25 minutes or until a toothpick inserted comes out clean. Allow to cool completely. Remove loaf from pan and wrap tightly in cling film. Freeze for at least four hours. Remove cling film and use a serrated knife to slice the loaf thinly. Arrange slices in a single layer on a parchment-lined baking sheet. Bake at 350f for 15 minutes until golden brown, flipping halfway through baking. Transfer to a rack to cool completely.
