bourbon candied pecans
Candied nuts are a favourite of mine and are even better when homemade. I serve them in salads, over fresh fruit, as a snack or packaged as a hostess gift. I love the taste of pecans and incorporate them into my dishes whenever possible. Roasting them is a welcomed sight on a charcuterie board. The heat brings a deeper taste, nutty flavour, and a delicious crunch. Pecans are also loaded with nutrients. Find out more, here. you will need
1 tablespoon olive oil
2 tablespoons bourbon
1 teaspoon sea salt
1/2 teaspoon ground cinnamon
3 tablespoons maple syrup
226g (8 oz) pecan halves
method
Preheat oven to 400F. Line a baking sheet with parchment paper. In a bowl add all ingredients except the pecans. Stir to combine and then add the pecans. Make sure all pecan halves are well coated. Tip pecans out onto the prepared baking sheet, spreading into a single layer.
Roast in the oven for 8 to 10 minutes; the colour will intensify. Remove from oven and allow to completely cool on baking sheet.

Cooking time varies (altitude, humidity) so keep an eye on the pecans while roasting to make sure they don’t burn.
