pistachio feta dip
Dips are one of the most accessible snacks to make (IMHO). This pistachio feta dip is easy and can be ready to enjoy in less than 15 minutes. When you have company over, dips are one of the first things your guests dig into. As much as I enjoy an ooey-gooey cheese dip, I also like ones that are on the healthier side. Pistachios are loaded with fiber. If you let the dip sit for a while, the flavours become more defined. Pair the pistachio dip with chunks of toasted sourdough bread, crudités, and crackers. This dip will not last long. Click here for more dip recipes. Tinker with this recipe and add garlic or cilantro instead of mint. Or omit the mint for fresh dill. This dip is open to interpretation; go for it and experiment.
you will need
2/3 cup (100g) shelled pistachios
2/3 cup (100g) feta, broken up
2/3 cup (100g) plain yoghurt
handful mint leaves
1/4 cup olive oil
zest of one lemon
splash of lemon juice
method
Add pistachios to a food processor and blend until it resembles fine crumbs. Then add the remaining ingredients and blend.
