frozen raspberry parfait
When it comes to making easy desserts, I’m all in. A typical parfait consists of cream, eggs, and sugar (cooked like a custard) then layered with fruit and granola. It’s easily adapted to suit your own tastes. This parfait recipe wanders off the beaten path by using cottage cheese. Yes, you read correctly. Cottage cheese is lower in calories and high in protein. Weight loss diets often include cottage cheese. I wanted to make a frozen dessert that wasn’t high in calories or fat but satisfied my ice cream craving. This parfait will be one of the easiest you have ever made. Swap the raspberries for fresh peaches or local blueberries. You could also try pineapple or mango chunks.
you will need
1 cup cottage cheese
1/2 cup fresh raspberries
2 tablespoons honey
juice and zest of half a lemon
method
Process all ingredients in a food processor until well blended. Place in a bowl and freeze for one to two hours. When ready to serve, top with fresh raspberries and homemade grenadine or favorite syrup.
