Roasted Cauliflower

After a five day visit to Canada’s Ocean Playground, I was happy to get back into my kitchen and cook!  Don’t get me wrong, the meals we had at Bicycle Thief, Sushi Nami, Seasons, Woody’s Bar-B-Q and La Perla were scrumptious but 5 days of dining out morning, noon and night had a toll on my system and I came back gagging for home cooking.  Cauliflower is an excellent source of vitamin C, K (anti-inflammatory) and a very good source of manganese.  This cruciferous vegetable is loaded with vitamins and minerals.  Click here to learn more.

You Will Need:
medium head of cauliflower, cut into bite-size florets
olive oil
sea salt and freshly ground black pepper
1 to 2 teaspoons ground cumin
splash of fresh lemon or lime juice
clove garlic, minced

Preheat oven to 200c (400f).  In a bowl, toss all ingredients together and place on a baking tray.  Make sure the cauliflower isn’t crowded on the tray otherwise if piled up onto each other the cauliflower will steam instead of roasting.

Place in oven and bake 25 to 30 minutes, turning cauliflower over half way through.  Use the tines of a fork to pierce for doneness.  Serve hot or at room temperature.

The Culinary Chase’s Note:  Roasting brings out the sweetness in cauliflower making it so very easy to devour!  Other seasonings to try are: curry powder, dill, coriander, garam masala, mint.  Enjoy!
