Beet Soup

beet soupFood that looks as pretty as this soup does makes me smile and my mind wanders off to warmer weather.  The days are getting longer and even though it’s a glorious day today filled with sunshine, a major snowstorm is heading our way.  This beet soup is my cup of happiness regardless of what’s happening outside.  It’ll soothe the soul and it can be the main attraction at the dinner table or a simple way to add another veggie to the meal.  Soup has to be one of the easiest meals to make and it’s always fun experimenting with new combinations.  Squash and apple soup is a favorite of mine and when I saw beet soup on a menu, I knew it was one I needed to make.

Serves 4
1/2 lb. cooked beets, chopped
olive oil
1 small onion, chopped
1 teaspoon curry powder
1 Granny Smith apple, cored and chopped
2 cups vegetable stock
plain yogurt, for topping

beets & appleIn a large saucepan, combine onion, 1 tablespoon of olive oil, and curry powder. Toss to coat and cook (covered) over low heat until soft. Add beets, apple, and stock. Bring to a soft boil, reduce heat and simmer, covered, 15 to 20 minutes or when apple is soft. Remove from heat and use a hand blender to process soup until smooth. Ladle into soup bowls, top with a tablespoon of yogurt.

The Culinary Chase’s Note: Add more stock or water if soup is too thick. Enjoy!
